How to make Roasted Cauliflower and Sesame Chutney
You need to do this
Cauliflower 1
Lemon, finely chopped 1
za’atar 1 tbsp
Olive oil 3 tbsp
Salt and ground black pepper
For the sauce
3 tablespoons of tahini
Curd 3 tbsp
Cider Vinegar 1 tsp
½ lemon juice
1 spoon of honey
1 clove of garlic
Olive oil 2 tbsp
Here’s how to make roasted cauliflower
First of all, steam the whole cauliflower. You should steam it for 15 minutes until it softens a little.
Preheat the oven to 180°C, then place the lemon wedges in the casserole and place the cauliflower on top. Sprinkle spices and salt and add 2 tablespoons of oil.
Cover and cook in the oven for 30 minutes, then remove the lid and cook for another 20 minutes.
Mix all the sauce ingredients, add all the spices well and water to make a loose, runny sauce.
Place the whole cauliflower on a large serving plate, drizzle some of the sauce over the top and sprinkle with the hazelnuts, almonds, roasted chickpeas and pomegranate.
