1. Creamy Spinach and Mushroom Soup
Required:
- 1 tablespoon of olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 8-10 mushroom pieces, sliced
- 4 cups of vegetable broth
- 1 potato, sliced
- 4 cups fresh spinach
- 1 cup heavy cream
- Salt and pepper to taste

- Step 2: Add the mushrooms and cook until they release their moisture.
- Step 3: Pour in the vegetable broth and add the diced potatoes. Simmer until the potatoes are tender.

3. Spinach and lentil curry
Required:
- 1 cup green lentils, rinsed
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 4 cups of vegetable broth
- 2 cups fresh spinach
- 1 teaspoon cumin seeds
- 1 teaspoon smoked paprika
- Salt and pepper to taste
Instructions:
- Step 1: In a large pot, saute onions, carrots and celery until soft.
- Step 2: Add garlic, cumin and smoked paprika. Cook for an additional minute.
- Step 3: Pour in the vegetable broth and add the lentils. Boil until the dal becomes soft.

4. Lettuce Paratha
Required:
- 2 cups whole wheat flour
- One cup of freshly chopped spinach leaves
- A coarsely chopped green chilli (optional for seasoning)
- 1 teaspoon ginger, grated
- 1/2 teaspoon cumin powder
- Salt to taste
- Water, as needed for kneading
- Ghee or oil, for cooking
Instructions:
Step 1: Prepare the dough
- In a mixing bowl, combine whole wheat flour, chopped spinach, green chillies, grated ginger, cumin powder and salt.
- Add water gradually and knead the mixture into a soft dough. Allow ten to fifteen minutes to rest.
Step 2: Divide and Roll
- Divide the dough into small, lemon-sized balls.
- Using a rolling pin, flatten each ball into a circular disc. When necessary, dust with flour to prevent sticking.
Step 3: Cooking the Parathas
- Heat a tawa (griddle) on medium heat.
- Place the rolled paratha on a hot tawa and cook until bubbles start appearing.
- Flip the parantha and apply a teaspoon of ghee or oil on the cooked side.
- Cook until golden brown on both sides, pressing gently with a spatula to cook both sides evenly.
Serve spinach parathas hot with curd, pickles or any favorite side dish.

5. Spinach and Feta-Stuffed Chicken Breast
Required:
- 4 boneless, skinless chicken breasts
- 2 cups fresh spinach
- 1/2 cup feta cheese, crumbled
- 2 cloves garlic, minced
- Salt and pepper to taste
- Olive oil for cooking

- Step 1: Turn the oven on to 375°F or 190°C.
- Step 2: In a bowl, combine the spinach, feta, garlic, salt and pepper.
